Phylum Bacillota (Firmicutes), Class Bacilli, Order Lactobacillales, Family Enterococcaceae, Genus Enterococcus, Enterococcus

Gram-positive, ovoid cells, 0.5-1 µm in diameter and arranged in pairs or in short
chains. Non-motile. Non-spore-forming.
Colonies grown on BHI agar supplemented with 0.05 % (w/v) L-cysteine, after 2 days
of incubation, are about 2-3 mm in diameter, circular, white, flat, with a smooth
surface and entire edge, and exhibit the production of a ‘ropy’-type exopolysaccharide.
Colonies on Glucose Yeast-Extract Peptone medium (GYP) agar plates are circular,
low-convex with entire margins, transparent and non-pigmented. Small, red colonies
appear on Slanetz–Bartley agar. No acidification, coagulation, reduction or
liquefaction in skimmed milk after 7 days of growth. Grows at pH 5.0-9.6, with 0.5-
6.5% NaCl and at 10, 30 and 37 ºC, but not at 45 ºC. Facultatively anaerobic, but
grows better under anaerobic conditions.
Isolated from samples of Spanish-style green-olive fermentations.

Positive results for esculin hydrolysis, starch hydrolysis, acid production from D-arabitol, esculin, D-fructose, D-glucose (without gas
production), D-galactose, D-mannose, maltose, mannitol, melibiose, N-acetylglucosamine, raffinose, sucrose, D-sorbitol, starch,
L-sorbose, trehalose, and turanose (weakly).
Negative results for catalase, gelatin hydrolysis, acid production from adonitol, D-amygdalin, D- and L-arabinose, L-arabitol, dulcitol,
erythritol, D- and L-fucose, glycerol, glycogen, gluconate, 2- and 5-ketogluconate, inositol, inulin, lactose, D-lyxose, melezitose,
L-rhamnose, D-ribose, methyl beta-xyloside, xylitol, D- and L-xylose.
