Phylum Bacillota (Firmicutes), Class Bacilli, Order Lactobacillales, Family Lactobacillaceae, Genus Pediococcus, Pediococcus
acidilactici Lindner 1887.
Synonym: Pediococcus lolii Doi et al. 2009.
Gram-positive cocci, 0.5-1.0 µm in diameter, occuring singly, in pairs and tetrads.
Non-motile. Non-spore-forming.
Colonies are off-white, low-convex, circular, entirely opaque, and about 1-2 mm in
diameter after 24 h of cultivation on GYP agar at 37 ºC. Growth occurs at 15-43 ºC and
at pH 4.2 and 8.0 and sometimes at pH 8.5. Optimum temperature of growth is 37-40
ºC. Maximum growth temperature is 50-53 ºC. Cells grow in the presence of 9-10%
(-w/v) NaCl. Facultatively anaerobe.
Isolated from barley, silage, gastrointestinal tracts of poultry and ducks, and in freshwater prawns (Macrobrachium rosenbergii).
Some strains produce the bacteriocin pediocin PA-1/AcH. Resistant to ampicillin, novobiocin, vancomycin, and nystatin.

Positive results for esculin hydrolysis, acid production from amygdalin, cellobiose, esculin, fructose, N-acetylglucosamine, galactose,
gentiobiose, glucose (without gas production), mannose, ribose, salicin, D-tagatose, and xylose. Lactic acid is the major end-product
of glucose fermentation.
Negative results for catalase (some strains may produce a pseudocatalase), gelatin hydrolysis, nitrate reduction, oxidase, acid
production from arbutin, dulcitol, glycogen, glycerol, inositol, inulin, D-lyxose, maltose, mannitol, melezitose, melibiose, sorbitol,
sorbose, starch, D-turanose, and raffinose.
Variable results for arginine hydrolysis, acid production from arabinose, lactose, rhamnose, trehalose, and sucrose.
