Phylum Bacillota (Firmicutes), Class Bacilli, Order Lactobacillales, Family Lactobacillaceae, Genus Pediococcus, Pediococcus
claussenii Dobson et al. 2002.
Gram-positive cocci, 0.6-1.0 µm in diameter, occuring singly, in pairs and tetrads.
Non-motile. Non-spore-forming.
Colonies are white, convex, smooth, circular and opaque. If exopolysaccharide is
produced, colonies are grey, convex, circular, smooth, glistening, opaque and sticky.
Production of exopolysaccharide can be lost upon repeated broth culture. In broth,
growth causes turbidity which clears in a few days if the cells are non-ropy. Maximum
temperature for growth is 40 ºC (no growth at 45 ºC), optimum temperature is 28 ºC .
Can grow in the presence of maximum 5% NaCl. Grows at pH 7-8. Facultatively
anaerobic.
Isolated from spoiled beer.

Positive results for acid production from amygdalin, arbutin, cellobiose, esculin, D-fructose, beta-gentiobiose, D-glucose, D-mannose,
mannitol (most strains), maltose (most strains), N-acetylglucosamine, ribose, salicin and trehalose.
